is it just me or is local tme in the game a little funny, it says 6pm EST, and i'm in the EST zone and its 10am

You should be able to have the option to pick what ever one you want.

But I dunno how difficult that would be to integrate with the game as the game runs on time itself.

time is correct now (again), but now its going to look like we posted in the future.

Have you looked into running a piece of software called NTP on the server?

This should resolve any clock skew/sync errors

I assure you, I'm very competent when it comes to server management. NTP comes pre-installed in fact, but it does no good if the server has a kernel panic every night and wakes back up with a clock 8 hours fast. Does no good of course, until I can get in there and actually run ntpdate
