Everytime i go to the gym, raid the janitors closet, etc it doesn't tell me whether i was successful, how much speed/defense/exp/money i have gathered

I am having this today also, however it isn't that stats aren't being updated rather the message that informs you of the gain during training is missing (Base stat figure is increasing) for me anyway. I have had this happen many times before and it usually corrects it self. Not a major issue

you still get your money from crimes and your stats from training........... like phil said it will correct itself........ usually in a matter of a few minutes

Yep happening to me too today but i am still getting all my stats so it really doesnt matter.... it happens the odd times as apollo said it fixes itself after a few minutes

if your doing quick training, it doesnt matter how much you gain. as long as you KNOW that your still gaining then there are no issues.
