Some inmate vs inmate multiplayer games would make this game really cool. You could even gamble agenst other inmates on them to make it even more fun. Some i can suggest that would be cool are:
Multiplayer Pool
Texas Holdem tournys and cash games running daily for the inmates
blackjack
liquidc...
id be up for poker but that would take a shit load of coding

Yeah, I would too, but having a game of blackjack or pool with another player would add a new twist, and probably get more people gambling through the gamesroom.
