If your strenght are lower than his defence you will miss all the time and vise versa, and for every hit you do your stamina goes down and "lowers" your stats..

You also have much higher speed than she does, so you swing almost three times as much. All that swinging depletes your stamina. Thats why she was eventually able to get a hit near the end.
